Ingredients
1.5kg Maris Piper potatoes (peeled weight)
1 tsp cornflour
6tbsp goose fat or sunflower oil
Thyme to garnish
Method
1Preheat the oven to 190C/170C Fan/Gas 5. Cut potatoes into chunks. Add to a large pan of cold water, cover, bring to a boil, then simmer for 5 mins.
2Drain, then return to the pan. Stand over a very low heat, uncovered, for 1 min to dry out. Sprinkle on cornflour, cover with a lid and shake to coat and roughen up the edges.
3Heat goose fat or sunflower oil in a large roasting tin, then add the potatoes and turn them over in the fat to coat. Roast for 30 mins.
4Increase the oven to 220C/200C Fan/Gas 7 and roast for 20-30 mins or until crisp, golden, and tender in the middle. Lift out with a draining spoon and serve garnished with thyme.
