Ingredients
200g Extra Special frozen Jumbo King Prawns
Vegetable Oil, for frying
240g bag Extra Special Baby Vegetable Stir-Fry
170g Rich and warming Coconut and lemongrass stir-fry sauce
1 Lime
Method
1Defrost the pack of jumbo king prawns.
2Place a large frying pan or wok over a medium-high heat, add a drizzle of oil then add the defrosted prawns. Cook until starting to turn pink then add the stir-fry baby vegetables, reserving the pak choi, herbs and red chilli, and cook for 1–2 mins.
3Pour in the lemongrass stir-fry sauce and stir to coat. Simmer for 5–10 mins until the prawns are cooked through.
4Roughly chop the pak choi and red chilli, adding pak choi to the pan for 1–2 mins.
5Serve with the herbs, red chilli and a squeeze of fresh lime juice.
