Ingredients

1 onion, finely chopped

1 tbsp vegetable or sunflower oil

2 garlic cloves, crushed

50g Asda Tomato Purée Double Concentrate

500g jar Asda Madras Curry Sauce

2 x 390g tins Asda Green Lentils in Water, drained and rinsed

400g tin Asda Red Kidney Beans in Water, drained and rinsed

¼ lemon, juice only

Asda Half Fat Fresh Soured Cream, to serve (optional, to make this dish vegan)

½ red onion, finely diced

2 x 250g Asda Pilau Micro Rice (or wholemeal or basmati)

Gently cook the onion for 8 mins in the oil, in a medium-large saucepan with a lid. When soft but not browned, stir in the garlic and tomato purée for a min. Add the madras curry sauce and drained and rinsed lentils and beans. Rinse out the curry sauce jar with 200ml water and add this to the saucepan too. Cover and heat through for 5–6 mins until bubbling, stirring occasionally.

Mix the lemon juice with the red onion to lightly pickle. Heat the rice following the pack instructions.

Season to taste, serve with fluffy pilau rice, top with crunchy diced red onions, and a little soured cream, if you like.
