Ingredients

400g can Chopped Tomatoes with Garlic

30g Fresh Basil

400g can of Cannellini Beans

2 Norwegian Cod Fillets

Method

Add the chopped tomatoes with garlic to a frying pan over a medium heat.

Pick the leaves from the fresh basil and set aside. Chop the basil stalks and stir these into the tomatoes, along with a pinch of salt and pepper, then bring to the boil and simmer for 5 mins.

Drain the cannellini beans and stir in, then nestle in the cod fillets, cover with a tight-fitting lid and gently cook for 6–8 mins until cooked through.

Scatter over the remaining basil leaves, a generous twist of cracked black pepper and serve.
