Ingredients

1 tbsp sunflower oil

4 pork sausages

4 rashers back bacon

8 mushrooms, halved

2 tomatoes, halved

2 free-range eggs

Baked beans, to serve

Crusty bread, to serve

Method

Heat the oil in a large, non-stick frying pan and cook the sausages until lightly browned. Add the bacon and mushrooms and continue cooking until the bacon is almost cooked.

Add the tomatoes and cook until they start to soften on the outside. Move everything to the edge of the pan and break in the eggs. Cook for 2-5 minutes until the white is set and the yolks cooked to your liking.

Serve with baked beans, heated in a separate pan, and crusty bread.
