Ingredients
10 slices Extra Special Dry Cured Pancetta, chopped
180g Merchant Gourmet Whole Chestnuts, chopped
500g trimmed Brussels sprouts, halved
3tbsp chopped parsley
Zest and juice ½ lemon
Method
1Cook the pancetta in a large frying pan for 5-6 mins until just crisping up.
2Add the chestnuts and Brussels sprouts. Stir-fry for 5 mins until just cooked through.
3Sprinkle with the chopped parsley, and season with freshly ground black pepper.
4Sprinkle over the lemon zest and juice and serve immediately.
5TOP TIP: To avoid overcooking Brussels sprouts, cut any large ones in half, then cook them at the last minute.
