Go one step further this Easter with our extra-indulgent Lemon Cheesecake Easter Eggs! They’re as delicious as they sound – and super simple to make.&nbsp;
Turn a basic chocolate Easter egg into something ultra decadent – and decorate with your favourite themed toppings!&nbsp;
The amount of cheesecake from this recipe will fill roughly 3 x 156g Easter eggs (six halves). However, you could fill lots of little Easter eggs – or make one large half as a showstopping centrepiece.&nbsp;
Makes about 10x 100g cheesecake filling Ready in 40 mins, plus chilling time
Ingredients:​
<ul>
<li>5 leaves Dr Oetker Platinum Grade Leaf Gelatine ​</li>
<li>125ml lemon juice – about 3-4 lemons​</li>
<li>Zest 1 lemon, finely grated​</li>
<li>750g fat-free quark, at room temperature​</li>
<li>175g icing sugar, sifted​</li>
<li>Hollow chocolate Easter eggs, separated into halves​</li>
<li>Assorted Easter treats to decorate​</li>
</ul>
Method:
<ol>
<li>Soak the gelatine leaves in a bowl of cold water for 5 mins. Heat the lemon juice in a pan until hot; take off the heat. Lift the gelatine out of the water (squeeze out the excess) and stir into the lemon juice until dissolved.​</li>
<li>Beat the lemon zest, quark and icing sugar with an electric whisk or wooden spoon until smooth. Add the lemon juice mixture and beat to combine.​</li>
<li>Pour the cheesecake mixture into the egg halves and chill until just set – about 2-4 hrs. Decorate with your favourite Easter treats, if you like.&nbsp;</li>
