Ingredients
2.5kg Asda Whole Salmon
1tbsp rapeseed oil
2 lemons, sliced
½ x 25g pack dill
Zest 1 lemon
Method
1Preheat the oven to 200C/180C Fan/Gas 6. Line a large baking tray with baking paper
2Cut deep slashes across a 2.5kg Asda Whole Salmon, trimmed and head removed, and rub all over with 1tbs rapeseed oil. Put the fish on the tray; stuff with 2 lemons, sliced, and ½ x 25g pack dill, chopped. Sprinkle over the zest 1 lemon, then halve the lemon and add to the tray with the cut sides down.
3Bake for 50-60 mins or until the fish is cooked and flakes away from the bone.
4Meanwhile, simmer baby potatoes in a pan of water for 15-18 mins, until tender. Drain, transfer to a serving dish and melt over some unsalted butter
5Add some mangetout to a pan of boiling water. Cook for 2 mins, drain and transfer to a serving dish.
6Transfer the roast salmon to a serving platter. Garnish with the remaining dill and the browned lemon ends, then serve with the buttered baby potatoes and the mangetout on the side.
