Ingredients
1 whole salmon, gutted and scaled
2 oranges, sliced
1 onion
Bunch of dill
1 tbsp Olive oil
Method
1Preheat oven to 200C/400F.
2Grease a large sheet of greaseproof paper with olive oil and place on a tray.
3Slice the oranges and onions and line up, overlapping on the tray.
4Lay the whole salmon on top of the oranges and onions. Score the salmon skin and add the dill to the inside.
5Season with black pepper, salt and an optional drizzle of olive oil.
6Oven cook for half an hour.
7Slide off the grease proof paper onto a serving dish.
