Ingredients
250g Asda Flavourful Lean Beef Steak Mince
50g breadcrumbs
½ tbsp dried mixed herbs
½ tbsp paprika, for the meatballs
1 medium egg
2 tbsp vegetable oil
½ white onion, sliced
3 garlic cloves, crushed
1 tsp chilli flakes
1 tsp paprika, for the sauce
100g tomato purée
30ml Vodka
150g spaghetti
75ml single cream
10g grated Parmesan, plus extra to garnish
Fresh basil, roughly chopped
Method
1To make the meatballs, place the beef mince, breadcrumbs, mixed herbs, paprika and egg along with a pinch of salt and some freshly ground black pepper into a large bowl. Use a fork or spoon to combine. Once mixed, wet your hands and shape into 10–12 equal-sized meatballs.
2Heat the vegetable oil in a non-stick frying pan over a medium-low heat. Add the meatballs, cover with a lid and fry for 20 mins, turning the meatballs every 5 mins until all sides are browned.
3Meanwhile, to make the vodka pasta sauce, place another pan over a medium heat and drizzle in the vegetable oil. Add the sliced onion, garlic, chilli flakes and paprika and fry for 5 mins until the onion is slightly softened. Add in the tomato purée and vodka then cook for a further 5 mins.
4Meanwhile, cook your pasta in a large pan of salted boiling water according to packet instructions. Drain, reserving 50ml of the pasta water, and set aside.
5Pour the single cream into the tomato vodka frying pan and season with salt and pepper. Give everything a mix and then add the pasta, reserved pasta water and Parmesan, combining everything until the spaghetti is coated in the sauce.
6Serve the pasta and top each plate with 5–6 meatballs. Garnish with chopped basil and extra Parmesan, if you like.
7Store any leftovers in an airtight container and freeze for up to 3 months. Defrost by leaving it in the fridge overnight, then add in a splash more single cream when reheating in the microwave (3 mins at 800W, stirring halfway through) or on the hob (10 mins on low heat)
