Ingredients
2 Onions
4 cloves garlic, minced
2 peppers, diced
1 tin chopped tomatoes
1 tin chic peas
1 tin Just Essentials garden peas, drained
1 stock cube, dissolved in water

Method
1Begin with a tablespoon of cooking oil in a saucepan over a high heat.
2Sautee the onions, garlic, dried mixed herbs and peppers until soft, fragrant and translucent, 3 - 5 minutes.
3Now tip in the washed rice, tinned garden peas and chic peas, continue to cook over the high heat for 1 minute.
4Next tip in chopped tomatoes, and 1/3 of the vegetable stock, allow to cook for a further 5-7 minutes or until all the stock has been absorbed.
5repeat with the remaining stock adding small amounts until fully absorbed.
6Season well with salt and pepper. Enjoy!
