Ingredients
2 Cans of chickpeas, drained and rinsed
Fresh dill, destemmed & finely chopped
4 tbsp Vegan mayo
90g Mixed baby leaf
250g Cherry tomatoes
Celery, finely chopped
1 Lemon
1 Red pepper, thinly sliced
Black pepper
Method
1Start preparing the salad ingredients by finely chopping the celery & fresh dill, slicing the red pepper and cherry tomatoes and rinsing the chickpeas.
2In a large bowl, add the rinsed chickpeas, dill, lemon juice and black pepper. Use a fork/potato masher to roughly smash the chickpeas.
3Next, add the vegan mayonnaise and celery into the bowl. Stir to combine.
4Layer the salad by adding a mixed baby leaf layer to start, then scatter red pepper slices onto the plate. Top with your vegan smashed chickpea mayo & sprinkle over the sliced tomatoes and an extra hit of dill. Serve with an extra squeeze of lemon juice and enjoy!
