Ingredients

1 Extra Special British Whole Duck

1tbsp clear honey

1 orange, thickly sliced

1 head garlic, halved

Handful watercress, to garnish

Method

Preheat the oven to 220C/200C Fan/Gas 7.

Put the whole duck in a roasting tin. Pat the skin dry with kitchen paper to help the skin crisp up.

Prick the duck all over with a fork and season generously with freshly ground black pepper.

Roast the duck on the middle shelf of the oven for 20 mins per 500g, plus 20 mins extra. Use a spoon to baste the duck with the melted fat every 10 mins during cooking.

About 20 mins before the duck finishes cooking, brush it with the honey and add the orange slices and garlic to the roasting tin.

When cooked, remove the duck from the oven and rest for 20 mins on a serving dish.

To serve, squeeze the orange slices over it and garnish with the garlic and watercress.
