Ingredients

1 Red Onion, diced

1 Head of Broccoli, chopped into florets, stalk finely chopped

2 x 400g cans of Plum Tomatoes

4 Cloves of Garlic, minced

500g Pasta Shapes

3 x 125g cans of Tuna In Brine, drained

Bunch of Fresh Parsley, roughly chopped

200g Cheddar, grated

1 tbsp Vegetable Oil

Preheat your grill to 200°C.

To a large non-stick frying pan, add the vegetable oil, red onion and chopped broccoli stalks. Season with pepper and fry over a medium/low heat until softened, for approx 4 minutes.

Meanwhile, use a hand blender or scissors to break down the plum tomatoes until smooth, or as chopped as possible.

Add the garlic into the pan to fry for a minute before adding the plum tomatoes and 400ml of water. Reduce the heat to a medium/low simmer and gently cook for 10 minutes.

Meanwhile, cook your pasta in boiling water, timer set to the packet time minus 3 minutes. Add the broccoli florets half way through.

Add half of the fresh parsley into the tomato sauce along with the drained tuna. Stir to combine and then when your pasta timer goes off, drain and add the undercooked pasta and sauce into the same saucepan. Add a handful of the cheese and stir to combine.

Pour the pasta mix into a baking dish and cover with a layer of cheddar. Cook under the grill for 10-12 minutes, or the cheese is melted and golden/crispy in places. Top with fresh parsley and dig in!
