Ingredients

400g pack Asda Juicy & Sweet Pineapple Chunks

500g cooked Basmati Rice (165g raw)

400g tin Black Beans in Water, drained and rinsed

½ x 30g pack Fresh Coriander, roughly chopped

125g pack Spring Onions, thickly sliced

75g Peppadew Sweet Piquanté Peppers Mild Whole, drained and finely chopped

2 Limes

2 tbsp Extra Virgin Olive Oil

Drain the pineapple and reserve the juice in a small bowl. Cut the pineapple chunks into small pieces and put into a large bowl.

Add the cooked rice, black beans, coriander, spring onions and peppers. Finely grate the zest from 1 lime and add to the salad bowl. You could use 2 microwavable packets of cooked rice, or you’ll need about 165g raw rice to get 500g after cooking. Cook both as per instructions and rinse under cold water until cold. Drain thoroughly.

Squeeze the juice from the zested lime and remaining lime into the pineapple juice. Add the oil, seasoning and whisk together until combined. Pour over the salad and toss everything together until combined.
