Ingredients

1 head broccoli, broken into florets

2 garlic cloves, grated

thumb-sized piece of ginger, grated

1 tbsp vegetable oil

3 tbsp red curry paste

1 x 400g tin coconut milk

4 x salmon fillets

160g mangetout, halved

1 bunch spring onions, chopped into 5cm pieces and tops reserved and sliced

1 red chilli, sliced, to serve (optional)

Preheat the oven to 200ºC/180ºC fan/gas 6. Toss together the broccoli, garlic, ginger and oil in a large roasting tray along with some salt and freshly ground black pepper. Cook for 15 mins.

Mix together the curry paste and coconut milk, then remove the tray from the oven and pour this mixture in. Nestle in the salmon fillets, then stir through the mangetout and spring onion pieces and season, making sure everything is covered in sauce. Return to the oven for 15 mins or until the fish is cooked through.

Once cooked, scatter over the remaining sliced spring onion tops to garnish, along with some sliced red chilli if liked.
