Ingredients
2 large garlic cloves, minced
2 Knorr Zero salt stock cubes
2tsp miso paste
2 tsp Asda red chilli paste or Gochujang paste
1 pack Asda coconut & lemongrass stir fry Sauce
1 pack Asda rice noodles
1 pack Asda edamame & broccoli stir fry vegetable
336g Asda Plant Based Edamame Balls
1tbsp sesame cooking oil, optional
Sprinkle of fresh coriander, roughly chopped
Method
1Place a large saucepan over a medium to high heat.
2Toss in the edamame bean and broccoli stir fry mix, along with the miso paste, chilli or Gochujang paste and minced garlic. Fry off for 2-3 minutes to allow the vegetables to soften slightly.
3Once softened, add 1.2L water, stock cubes and the lemongrass and coconut stir fry sauce. Turn the heat down to allow it to simmer and stir the ramen broth occasionally.
4Whilst the broth is gently simmering, cook the edamame balls as per pack instructions.
5Just before the edamame balls are fully cooked, add the rice noodles to the broth and allow to cook for 3-5 minutes.
6Once the balls and the noodles are fully cooked, dish the ramen into four soup bowls, ladling the broth on top of the noodles.
7Place 3 edamame balls into each dish, garnish with chopped coriander and a drizzle of sesame oil.
