Ingredients

8 Adsa ES mini meringues, roughly crushed

400g ripe Asda GS Strawberries, washed and hulled, reserve a couple for decoration 

300ml double cream

1tbsp elderflower cordial 

mint sprigs to garnish

Method

Puree 1/3 the strawberries with the elderflower cordial in a food processor or with a stick blender, push the puree through a sieve to remove the seeds. Set aside.

Roughly chop the remaining the strawberries. Whip the cream until stiff peaks form. Using a large metal spoon carefully fold in the crushed meringues with the chopped and pureed strawberries. Be careful not to over-mix, you want ripples of strawberry puree.

Divide the mixture between 4 small bowls or glasses and serve immediately garnished with the reserved strawberries and a few mint sprigs.
