Ingredients
1 pack Little Gem lettuce, 10 leaves removed
2 tbsp balsamic vinegar
1 tbsp olive oil
100g Asda Ripe & Sweet Strawberries, hulled, finely chopped
1 pack halloumi, cut into small cubes
5g basil, finely sliced
Method
1Place the lettuce leaves on a platter and set aside. In a small bowl combine the balsamic, olive oil and seasoning, add the chopped strawberries and gently stir to thoroughly coat.
2Place a large non-stick frying pan over a medium heat and add the halloumi. Cook for 2–3 mins turning until golden on both sides. Remove from the pan, chop and share between the salad cups. Top with the strawberries, reserving the dressing.
3Drizzle each cup with a little dressing then finish with a sprinkling of finely sliced basil, freshly ground black pepper and serve.
