Ingredients

1tbsp rapeseed oil

2 Extra Special British Aberdeen Angus Sirloin Steaks

1 red onion, thinly sliced

1 clove garlic, crushed

4 ciabatta rolls

60g pack rocket

Method

Remove the steaks from the fridge 30 mins before it’s time to cook them.

Heat 2tsp of the oil in a large frying pan on a medium setting. Cook the onion, stirring often, for 6-8 mins until softened. Remove from the pan with a slotted spoon. Set aside.

Using the same pan, heat the remaining oil on a high setting. Pat the steaks dry and season with black pepper.

Sear the fat of the steaks in the frying pan until golden then cook them for 2 mins on one side. Reduce the heat and add the crushed garlic to the pan. Turn the steaks over and cook for a further 2 mins – or 4 mins if you like your steak well done.
