225g caster sugar
225g softened butter
225g self-raising flour, sieved
4 medium eggs
1tsp vanilla extract
Method
1Preheat the oven to 180C/ 160C Fan/Gas 4. Grease and line your tin. The size of the tin will vary depending on what recipe you are using.
2Beat all the ingredients in a large mixing bowl with an electric hand-whisk for 3-4 mins. Spoon into the tin, level the surface and bake for 1 hr – 1hr 20 mins, depending on the tin size. To test, a metal skewer inserted into the centre of the sponge should come out clean. Cool in the tin for 5 mins then turn out onto a cooling rack. Cool completely before decorating.
