Ingredients
1 tbsp Olive oil
2 Spring onions, sliced
300g Asda Mild & Tender Spinach
1 sheet of ready-rolled puff pastry
100g Feta cheese, crumbled
40g Just Essentials by Asda Hard Cheese, grated
1 Egg, beaten
1 tbsp Sesame seeds
Method
1Heat the oven to 220°C/200°C fan/gas mark 7. Line a baking tray with baking paper.
2Drizzle the oil in a large frying pan over a medium heat. Fry the spring onion for 1 min then add a handful of spinach and stir through. Keep adding spinach until it has wilted down, then season to taste.
3Spoon the spinach onto a chopping board and allow to cool slightly, then roughly chop.
4Unroll the pastry onto its wrapper and spread the cooled spinach mixture on top, leaving a 1cm border. Sprinkle over the crumbled feta and hard cheese then roll up from the longest end into a long sausage.
5Cut into 1cm slices and place them, cut side up, on the baking tray. Brush the beaten egg over each slice and top with sesame seeds.
6Bake for 15 mins until the pastries are puffed and lightly golden.
