Ingredients
½ 225g horseshoe Asda ES Chorizo Casero, finely cubed
1 onion, finely chopped
1 large clove garlic, finely chopped or crushed
1tsp smoked paprika
2 x 400g tin Asda Butter Beans, drained and rinsed well
400g tin chopped tomatoes
500ml vegetable stock
320g frozen green beans
2tbsp chopped flat leaf parsley
Crusty bread, to serve (optional)
Method
1In a large saucepan, cook the chorizo over a medium heat, stirring, for 2-3 mins until the oils are released. Remove and set aside with a slotted spoon. Add the onion and cook for 4-5 mins until soft. Stir in the garlic, smoked paprika and seasoning. Cook for another minute.
2Stir in the butter beans, chopped tomatoes, cooked chorizo and stock and bring to the boil. Reduce the heat and simmer for 10 mins until thickened slightly. Add the green beans, cover with a lid and cook for another 5 mins until tender.
3Serve in bowls with the parsley sprinkled across the top and bread on the side, if using.
