Ingredients
50g Flora ProActiv Light Spread
150g plain flour, plus extra to dust
30g caster sugar
2tsp vanilla bean paste
4 sheets leaf gelatine
50ml semi-skimmed milk
15g cocoa powder
300g Asda Fat Free Greek Yogurt with Honey
20g ready to roll white icing
Dr. Oetker Food Gel in Black
Method
1Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper.
2In a large bowl, use your fingertips to rub the Flora into the flour until it resembles fine breadcrumbs. Add the caster sugar, then drizzle in 2tbsp cold water and 1tsp of the vanilla bean paste. Use the tip of a butter knife to bring the mix together, adding more water if necessary. Turn out onto a clean worktop and lightly knead until you have a smooth ball of dough. Wrap in clingfilm and leave to rest for 15 mins at room temperature.
3Lightly flour the worktop and roll the dough to 5mm thick. Use a 5cm circular cookie cutter to cut out 20 biscuits. Transfer to the prepared baking tray and bake on the top shelf of the oven for 15-20 mins until crisp and golden. Allow to cool completely.
4Soak the gelatine in cold water for 5 mins until soft then squeeze out any excess liquid. Put into a small pan with the milk and heat over a low setting, until the gelatine melts and the mixture is smooth. Set aside to cool to room temperature.
5Sift the cocoa powder into the yogurt and stir in the remaining vanilla bean paste. Mix until smooth. Stir in the melted gelatine and milk until smooth.
6Transfer the mixture to a piping bag fitted with a 1cm plain round nozzle. Chill in the fridge for 30 mins.
7Pipe the chocolate mousse in an upward circular motion on top of each biscuit, to create the poo!
8Roll half the white icing into 40 small balls then flatten slightly. Place 2 on each ‘poo’ for eyeballs and add a dot of black food gel for a pupil on each eye.
9Roll the remaining white icing to 1mm thick and use a sharp knife to cut out 20 smile shapes. Place just below the eyes and serve immediately.
