Ingredients

8 Pork Loins, sliced into chunks

288g of Onions, thinly sliced

381g of Mixed Peppers, thinly sliced

565g Pineapple pieces, with juice

64g of Tomato Paste

3 tbsp Honey

30ml of Rice Vinegar

5g of Spring Onion per portion

1 kg Rice, thoroughly washed

1 tsp Rapeseed Oil

2 tbsp Cornflour with 2 tbsp water

400ml Chicken Stock

Method

Start by searing the pork loins with one teaspoon of rapeseed oil over a high heat. When the pork has taken on some colour on one side (not fully cooked), add into the slow cooker.

Next, add the onions, peppers, pineapple pieces (along with the juice in the can), tomato paste, honey, rice vinegar, stock, and black pepper. Stir to combine and cook on high for 3 hours or low for 4 hours.

When there’s 20 minutes left on your slow cooker, add the cornflour slurry into the mix. Stir to combine and leave to thicken.

During this time, cook your rice according to packet instructions.

Serve up your sweet & sour pork with a portion of rice and a sprinkle of spring onion.
