Ingredients

4tbsp Asda Real Mayonnaise

1⁄4tsp turmeric

1⁄2 small clove garlic, crushed

Juice 1⁄2 lemon

2 large Grower’s Selection British Baking Potatoes

Sunflower oil, for frying

Method

To make the dip, put the mayonnaise, turmeric, garlic and lemon juice in a bowl and mix together. Sprinkle with cracked black pepper and set aside.

Using a mandolin, or by hand, cut the potatoes into fine matchsticks. Pat dry with kitchen towel – this will ensure crispy fries.

Fill a deep-fat fryer half full with sunflower oil and heat to 170C. Or heat the oil in a half-filled deep saucepan until a cube of bread dropped in goes golden in 40 secs.

Add the potato strings to the pan and cook for 6-7 mins until crisp and golden – you may have to do this in batches. Drain on kitchen paper. Serve straight away with the turmeric mayo.
