Ingredients
2 tbsp Extra Virgin Olive Oil
2 tbsp Reduced Fat Crème Fraîche
Juice and zest ½ Lemon
1 tsp Runny Honey
3 Asda Flavourful Reduced Fat Pork Sausages
1 small Courgette (100g), peeled into ribbons
50g Frozen Peas, defrosted
50g Rocket
1 tub Asda Spicy & Peppery Salad Cress, snipped
1 Shallot, finely chopped
2 tbsp Parsley, roughly chopped
15g Parmesan, finally grated
Crusty Bread, to serve
Lemon wedges, to serve
Method
1To make the dressing, whisk together 1 tbsp oil, the crème fraîche, lemon juice and zest, honey and seasoning.
2Heat the remaining oil in a non-stick frying pan over a medium heat. Remove the sausages from their skins. Crumble into the frying pan. Fry for 8–10 mins, breaking up pieces with a wooden spoon until golden, crispy and cooked through.
3Arrange the courgette, peas, rocket and cress on a dish, scatter over the shallot, and spoon over the warm sausage. Drizzle over the dressing and sprinkle with parsley and Parmesan. Serve with crusty bread and lemon wedges.
4Cook’s tip: Try replacing the Parmesan with crumbled Roquefort or Gorgonzola cheeses for a sharp alternative.
