Ingredients

3 Mixed Peppers, thinly sliced

1 Red Onion, cut in thick wedges

3 Large Carrots, peeled & thinly sliced

1 Head of Broccoli, chopped into florets and stalks thinly sliced

250g Egg Noodles

5 Eggs (jammy boiled egg to serve)

½ Lime, juiced

2 tbsp Vegetable Oil

1.5 litres Veggie Stock

1 tbsp & 3 tbsp Soy Sauce

Preheat the oven to 190°C FAN/ 210°C Conventional.

On a baking sheet, add the peppers, carrots, onion, broccoli florets and stalks. Coat in 2 tbsp of vegetable oil and 1 tbsp soy sauce. Season with pepper and stir to ensure the veg is evenly coated. Pop in the oven for 30 minutes.

After 20 minutes, cook your noodles in 1.5 litres of vegetable stock. Cover with a lid and leave to cook for 5 minutes. Then, to create your broth, add the juice of half a lime and 3 tbsp of soy sauce.

For the perfect jammy egg, cook the eggs in boiling water for 6 minutes.

Serve up a portion of noodles & broth. Then add a portion of vegetables, a jammy egg (sliced in half) and top with a crack of black pepper. Enjoy!
