Ingredients
540g tin Asda Rhubarb in Light Syrup
3tbsp Extra Special Rhubarb & Ginger Gin Liqueur
Pink gel food colouring (optional)
200ml whipping cream
2tbsp icing sugar
100g Asda Natural Fat Free Fromage Frais
½ tsp vanilla extract
Method
1Drain the tin of rhubarb, reserving 3tbsp of the syrup. Set the rhubarb aside.
2Add the rhubarb liqueur to the syrup along with a dot of pink gel food colouring. Mix together until well combined, then gently stir in the rhubarb until coated.
3In a separate bowl, whip the cream and icing sugar to soft peaks. Fold in the fromage frais and vanilla extract.
4To assemble, spoon some of the cream into the bottom of 6 clean jars and top with a layer of the rhubarb. Repeat with more cream then more rhubarb. Chill in the fridge until it’s time to serve.
