Ingredients
315g Self-raising flour, sifted
2 tbsp Cocoa powder, sifted
4 tbsp Caster sugar
2 Eggs, large
200ml Semi-skimmed milk
125ml Asda Buttermilk
½ tsp White wine vinegar
½–1 tsp Red gel food colouring
2 tbsp Vegetable oil
80g Asda Greek Style Ful Fat Yogurt
220g Mixed berries
Drizzle of maple syrup or honey (optional)
Method
1To make the pancake batter, tip the flour, cocoa powder and sugar into a large mixing bowl. Gradually whisk in the eggs, milk, buttermilk and vinegar until you have a smooth batter. Then stir in the red food colouring to create a bright red batter.
2Heat ½ tbsp oil in a large non-stick frying pan over a medium heat, then add 2 tbsp of batter and spoon into a circle. You should be able to fit 2–3 into a large pan. Fry for 1–2 mins until small bubbles start to form on the surface of the pancake, then flip and fry for a further 1–2 mins until starting to turn golden around the edges. Repeat until all the batter is used.
3Plate up with a spoonful of yogurt in between each layer. If you want a neat stack you may have to leave the pancakes to cool slightly before layering with yogurt. Finish with a sprinkling of berries and a sweetener like maple syrup or honey, if you like.
