Ingredients

½ Red Cabbage (around 400g), finely sliced

2 Red Onions, finely sliced

3 tbsp Olive Oil

2 Garlic cloves, finely sliced

200g Cherry Tomatoes, halved

30g Just Essentials by Asda Hard Cheese, finely grated

500g Asda Gnocchi Pasta

1 tbsp Balsamic Vinegar (plus extra to serve)

125g Asda Light Mozzarella Cheese

15g Flat Leaf Parsley, chopped

Method

Preheat the oven to 200ºC/180ºC fan/gas 6. Place the cabbage and onions in a large bowl and, using your hands, scrunch together with 2 tbsp of olive oil and a good pinch of salt and pepper. Tip onto the largest baking tray you have and spread out in an even layer, cook in the oven for 10 mins.

Meanwhile, put the garlic, tomatoes and the hard cheese in a large bowl with the gnocchi and mix with a tbsp of olive oil, season with salt and pepper.

Remove the cabbage from the oven, drizzle over the balsamic vinegar and toss together, then spread it back out in an even layer. Scatter the gnocchi and tomato mixture over the top and return to the oven for 20 mins, until everything is golden and starting to crisp up.

Tear over the mozzarella and drizzle over a little more balsamic vinegar, if you like. Sprinkle over the parsley with the remaining finely grated hard cheese.
