Ingredients
1tsp ground cinnamon
½ tsp ground nutmeg
2tbsp brown sugar
2tbsp maple syrup
6 Bramley apples (each peeled, halved and cored)
Sprigs of thyme
1kg rindless pork loin
Mash (optional)
Green beans (optional)
Method
1Preheat the oven to 180C/160C Fan/Gas 4. Mix together the spices, sugar and syrup; coat the apples in the mixture.
2Put the pork in the middle of a large baking tray, with the apples around the edges, and bake for 1 hr 30 mins. Allow to rest on a board for 10 mins, then garnish with the thyme. Mash the apples in a bowl to make a sauce.
3Slice the meat and serve with the apple sauce, plus mashed potatoes and beans, if you like.
