Ingredients
2 large eggs
2 ripe avocados, peeled and destoned
1tsp lime juice
2 thick slices Extra Special Sourdough Boule
2tsp olive oil
Handful of watercress
1 chopped red chilli
Cress, to garnish
Method
2Mash the avocados with the lime juice.
3Brush the sourdough slices with the olive oil.
4Toast on both sides under a hot grill. Spread the mashed avocado on the toast, then top each slice with a poached egg.
5Season with ground black pepper and serve garnished with cress and chopped red chilli.
