Ingredients

2 Grower’s Selection Plantain, thinly sliced horizontally

1tsp rapeseed oil

1tsp cayenne pepper

3tbsp light mayonnaise

1tsp mild curry powder

Juice ½ lime

Method

Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper.

Arrange the plantain slices on the tray in an even layer, drizzle with oil and sprinkle on the cayenne pepper. Bake in the oven for about10-15 mins until crisp.

Mix the mayonnaise, curry powder and lime together until well combined. Serve with the chips.
