Ingredients
144g Onion, diced
419g Broccoli, sliced into florets/ stalk chopped
350g Spaghetti
100g Cream Cheese
300g cooked Beetroot, sliced into chunks
15ml Lemon juice
2g of Fresh Basil per portion
1 tbsp Vegetable Oil

Method
1Start by adding one tablespoon of oil to a non-stick frying pan. Add the onion and chopped broccoli stalks. Season with pepper and gently fry for 5 minutes.
2Meanwhile, cook your spaghetti in boiling water, setting your timer to the packet time minus 1 minute. Steam your broccoli florets over the spaghetti.
3Next, add the cooked onion/broccoli stalks to a blender, along with the cream cheese, lemon juice, beetroot and a ladle of pasta water. Blend until smooth.
4When your pasta timer goes off, reserve a large mug (125ml) full of pasta water and transfer the spaghetti into the pan with the pink sauce. Stir to combine and loosen with a splash of pasta water if necessary.
5Serve up your pink spaghetti with a portion of steamed broccoli & top with fresh basil.
