    Ingredients

    300g Asda Fat Free Cottage Cheese with Pineapple, plus extra to serve

    3 medium eggs

    40g porridge oats

    1tsp vanilla extract

    125g plain flour, sifted

    1tsp baking powder

    150g fresh berries, such as blueberries, raspberries and strawberries

    4tbsp maple syrup

    Mint leaves, to garnish

    Method

    Blitz the cottage cheese with the eggs, oats and vanilla in a processor. Pour into a bowl and stir in the flour and baking powder.

    Heat a nonstick frying pan over a medium setting. Add 2tbsp batter per pancake and cook for 2-3 mins each side, flipping carefully so they don’t break. Keep warm. Repeat with the remaining batter to make 12 pancakes.

    Serve the pancakes on a platter, topped with the berries, maple syrup and mint, and with the extra pineapple cottage cheese on the side.
