Ingredients
200g Prawns, defrosted
1 Lemon
1 Bulb garlic, thinly sliced
300g Linguine
1 courgette, grated
Fresh parsley, finely chopped
3-4 tbsp Olive oil
Ground black pepper
Method
1Add linguine to boiling water, setting your timer to 2 minutes minus the packet time.
2In a large/ deep frying pan, add the olive oil, garlic and lemon zest into the pan on a low heat. Season with black pepper and gently fry for around 4 minutes. Ensure that the heat is low as we don’t want to burn the garlic!
3Next, add the courgette into the pan, increase the heat to medium and gently fry until all the moisture has released and evaporated.
4Once the moisture has evaporated, add the defrosted prawns and undercooked pasta into the pan along with around 3 ladles of pasta water.
5Stir to combine and continue to cook until the pasta water thickens and turns into a glossy sauce. At this stage, stir the parsley and lemon juice into the pan.
6Serve with black pepper and enjoy!
