Ingredients
1tsp Cooking Oil
1 Bag Mixed Baby Leaf Salad
120g Carrots, washed & grated
500g Frozen Mashed Potato
4 Basa Fillets
162g Cherry Tomatoes
1 Onion, sliced
2 Garlic cloves, finely chopped
2 Courgettes, sliced in 2-3cm thick roundels
Method
1Start by Preheating the oven to 200C.
2Place the oil, sliced onions, garlic, sliced courgettes and half of the cherry tomatoes into the roasting dish, place in the hot oven uncovered for 7 - 10 minutes or until the cherry tomatoes begin to blister slightly.
3Now turn the oven down to 180C and carefully remove the dish from the oven, lay the 4 fish fillets over the vegetables and return to the oven for an additional 15 minutes.
4Whilst the fish is baking, weigh out the ASDA frozen mash potato pellets into a saucepan or microwavable container and cook as per pack instructions. - for a smoother creamier mashed potato, finish off with a tablespoon of butter.
5For the final 5 minutes of the fish cooking, season to taste.
6Serve the baked fish and vegetables with a dollop of creamy mash and a baby leaf salad with the remaining cherry tomatoes, sliced and grated carrot.
