Ingredients
400g Asda Seasoned Pork Sausage Meat
1 onion, finely chopped
250g pack Just Essentials by Asda White Mushrooms, roughly chopped
2 cloves garlic, crushed
2 x 400g tins chopped tomatoes with herbs
1 chicken stock cube, dissolved in 500ml just-boiled water
2tbsp tomato purée
Pinch crushed chillies (optional)
300g penne pasta
250g frozen whole leaf spinach
3tbsp Asda 50% Less Fat Crème Fraîche
75g Just Essentials by Asda hard cheese, grated
½ tbsp olive oil
Method
1Heat the oil in a large wide saucepan over medium-high heat. Once hot add the sausage meat and cook, breaking up with a wooden spoon, for 4-5 mins until golden brown.
2Add the onion and mushrooms and cook for a further 3-4 mins until golden and softened.
3Add the garlic and cook, stirring, for a further minute. Add the chopped tomatoes, chicken stock, tomato purée, crushed chillies (if using), penne and spinach. Season and stir everything together well. Cover with a lid then bring to a boil, reduce the heat to low and cook, stirring occasionally, for 10-12 mins until the pasta is cooked to your liking.
4Once cooked, remove from the heat and stir through the crème fraîche. Taste and adjust seasoning, if you like. Divide between dishes and top with the grated cheese before serving.
