Ingredients
10g Free from cheddar, grated
1tsp black pepper
Sprinkle of fresh parsley, chopped
600g Asda frozen vegetable base mix
1tsp rapeseed oil
2g Asda mixed herbs
30g tomato puree
400g tinned chopped tomatoes
1 Knorr Zero salt stock pot
400g tinned cannellini beans, drained
1 pack OMV! caramelised onion sausages
Method
1Heat the oil in a saucepan over a medium heat.
2Add the vegetable base mix from frozen and cook for 5 minutes, stirring occasionally
3Add the herbs and the tomato puree, then cook for 1 minute.
4Add in the chopped tomatoes. Rinse the tin with 250ml water and tip this into the pan.
5Next, add the cannellini beans, the stock pot and a twist of black pepper. Let this simmer for 15 minutes.
6Meanwhile, grill the sausages as per the packet instructions.
7Once cooked, slice the sausages into roughly four pieces per sausage and toss into the cassoulet and mix.
8Finally, spoon the cassoulet into 3 bowls (or 2 and save the leftovers!) and top with the grated cheese and chopped parsley.
