Ingredients
50g baking spread, softened
30g rapeseed oil
100g soft light brown sugar
1 medium egg
1tsp vanilla extract
100g self-raising flour
100g porridge oats
60g raisins
Method
1Preheat the oven to 180C/160C Fan/Gas 4. Line 2 baking trays with baking paper. Put the baking spread, oil, sugar, egg and vanilla extract in a large bowl. Beat with a wooden spoon until well combined.
2Stir in the flour and oats, then gently stir in the raisins.
3Put rounded teaspoons of the mixture on the baking tray. Leave a 3cm gap between them to allow them to spread slightly.
4Bake for 12-14 mins until golden. Leave on the tray for 10 mins then transfer to a wire rack to finish cooling. Best eaten on the same day.
