Ingredients
For the swirl
75g Raspberries
1 tsp Runny honey
For the bark
500g Plain full fat yogurt
60g Runny honey
1 1/2 tsp Vanilla bean paste
125g Raspberries
2 Nectarines
40g Mini meringues, broken into pieces
Method
1Line a medium baking tray with baking parchment. Mix together the yogurt, honey and vanilla bean paste, then spread mixture in an even layer on the lined tray.
2For the swirl, whizz the raspberries and honey in a mini food processor (or mash well in a bowl with a fork). Push through a fine sieve, working the pulp well to get as much smooth purée out as possible. Discard seeds. Drizzle the swirl onto the yogurt layer.
3Scatter over the whole raspberries, chopped nectarines and mini meringues. Freeze for 2 hours, or until solid.
4To serve, peel the bark off the parchment and break into shards.
