Ingredients

1 Pack of Mushrooms, Cut Into 1/4

1 Can of Chickpeas, Drained

1 Carrot Diced (from frozen mixed veg)

2 Garlic Cloves, Diced

1 Onion, Diced

Frozen Mixed Veg

Method

This recipe requires our homemade tomato sauce, please search for our "Just Essentials Tomato Sauce" recipe on good living.

First add a tbsp of oil to a sauce pan over a medium high heat, add the mushrooms and sautee for 5 mins.

Next add the onions, carrots and garlic and cook until soft, then add the drained chickpeas, tomato sauce, mixed herbs and the mixed veg. Season well with salt and pepper and bring to a simmer. Cook for 15 mins.

Then pour into a baking dish and top with the sliced potatoes, brush the potatoes with a tbsp of oil and bake in a preheated oven 180°C fan for 25 mins until the potatoes are golden and crispy.
