Ingredients
1kg pack Frozen for Freshness sweetcorn
2 large Simply Cook from Frozen Chicken Breast Fillets, thawed
4tbsp Asda Real Mayonnaise
Juice ½ Grower’s Selection Lime, plus extra to squeeze over
½ Grower’s Selection Red Onion, finely diced
½ Grower’s Selection Cucumber, finely diced
Bunch Grower’s Selection Coriander, chopped, 1tbsp reserved
100g Smart Price Greek Style Salad Cheese, crumbled
1tbsp rapeseed oil
Method
1Slice the chicken fillets in half lengthways, to create 4 long, thin pieces. Heat the oil in a griddle pan on a high setting, then add the chicken pieces. Fry on each side for 3 mins, turning only once, halfway through. Set aside to rest and cool, then cut into thin slices.
2Put the frozen corn and 150ml water in a large nonmetallic bowl, then zap on high in the microwave for 5 mins. Pop into a colander to drain, then rinse with cold water until cooled. Shake the colander to get rid of any excess water.
3Put the sweetcorn, mayonnaise, lime juice, red onion, cucumber and coriander in a large mixing bowl. Stir to combine well, then season with black pepper.
4Top the elote-inspired sweetcorn salad with the grilled chicken. Sprinkle with the cheese and reserved coriander, then serve with the extra lime to squeeze over to taste – enjoy!
