Ingredients
500g frozen Scratch Cook Mediterranean Veg Mix in a Herby Dressing
500g pack Asda Tomato Passata with Basil
120g Asda Greek Feta, cubed
4 mixed-colour peppers
2tbsp balsamic glaze
Method
1Preheat the oven to 200C/180C Fan/Gas 6.
2Cook the frozen veg in a large pan until thawed and warmed through. Remove from the heat, then add the passata and feta.
3Cut the tops off the peppers and deseed. Put in a roasting dish, fill with the veg mix and put the tops on.
4Bake for 25-30 mins until the peppers are tender.
5Serve with a drizzle of the balsamic glaze
