Ingredients
275g mixed peppers, diced
100g tenderstem broccoli
250g cherry tomatoes, halved
130g red onion, thin wedges
2 large garlic cloves, minced
2 sprigs fresh rosemary / thyme, optional
400g new potatoes, halved
1tbsp rapeseed oil
400g Plant Based Meat Free Meatballs
175ml OMV! Pesto Style Dressing
Sprinkle of fresh parsley, roughly chopped
Method
1Begin by preheating the oven to 200 °C.
2In a large mixing bowl, place diced bell peppers, halved new potatoes, thin wedges of red onion and minced garlic, toss together with 1 tablespoon of cooking oil and season well with salt & pepper.
3Now, spread the mixture out onto a non-stick baking tray, topping with the fresh herbs. Bake for around 15 minutes until the potatoes are just slightly undercooked.
4Next, remove the tray and add the meat-free meatballs. Return it to the oven, lowering the temperature to 180oC and cook for a further 17-20 minutes.
5Once the meatballs are just about cooked, remove the tray from the oven again, add the halved cherry tomatoes and tenderstem broccoli. Return it to the oven once again and cook for a final 7-10 minutes or until the tomatoes begin to blister.
6Finally, portion out onto four plates and serve with the pesto style dressing and chopped fresh parsley.
