Ingredients

2 tbsp Maple Syrup

1 tbsp Rum or Pineapple Juice

6 Peaches, stone removed, halved

4 tbsp Asda Reduced Fat Crème Fraîche

½ Lime, juiced and zested

2 tsp Fresh Mint, finely chopped

8 Pecan Nuts, chopped

Pinch of Cinnamon (optional)

Mix the maple syrup with the rum or pineapple juice. Prick the cut sides of the peaches with a fork, taking care not to go all the way through, and brush the cut sides with a little of the syrup mixture.

Place cut-side down on a BBQ and grill over a medium heat for 3–4 mins until charred and starting to soften. Turn them over and brush with more maple syrup, then cook for 2 mins more. Turn again, brush with the syrup and cook for another 2–3 mins.

Mix the crème fraîche with the lime juice, zest and half the mint.

Serve the peaches topped with a dollop of the crème fraîche mix. Scatter the remaining mint and chopped pecans on top. Drizzle with any remaining maple mixture and finish with sprinkling of cinnamon if using.

To cook indoors: Cook the peaches in a large non-stick pan or on a pre-heated griddle pan, over a medium heat for 4–5 mins until lightly charred and starting to soften. Turn the peaches over and brush with more of the maple mixture as the bottoms cook, repeating after 2 mins. Cook for a further 3–4 mins.
