Ingredients

4 medium sweet potatoes, cut into thin batons

2tbsp olive oil

2tbsp cornflour

1tsp paprika

1tsp oregano

1 red onion, sliced

2 peppers, diced

2tbsp butter or olive oil

1tsp garlic paste

1tbsp plain flour

450ml semi-skimmed milk

1tsp paprika

1tsp oregano

250g reduced fat cheddar cheese, grated

To make the sweet potato fries, mix together the oil, cornflour, paprika and oregano in a bowl along with a pinch of salt. Add in the sweet potatoes and mix well to coat. Air fry at 200ºC for 15-20 mins or until golden and crisp.

To make the cheese sauce, heat the butter or olive oil in a pan over a medium heat. Fry the garlic paste for 10 secs, then add the flour and cook until it changes colour and darkens. Add in the milk along with a pinch of salt, the paprika and oregano. Keep stirring so no lumps are formed. Once the sauce starts to become thick, add the cheese and remove from the heat, allowing the cheese to melt before mixing through the sauce.

Once the fries are cooked, place them on a baking dish that fits your air fryer and add the cheese sauce to the top along with the sliced onion, peppers and mozzarella cheese, if using. Air fry for 5 mins at 200ºC or until the top is starting to turn golden. Alternatively, you can heat this together under the grill. Serve with your choice of sauce drizzled on top.
