Ingredients

2 x 260g Cod Fillets

100g Asparagus Tips (chopped roughly into 1 1/2 inch pieces)

100g Tenderstem Broccoli (chopped roughly into 1 1/2 inch pieces)

50g softened Butter

2 tsp finely grated Ginger

2 tsp Cook! By ASDA Lemongrass Paste

Juice of half a Lime

2 tsp finely chopped Coriander

Method

Cut 2 large squares of baking foil. Place the prepared vegetables in the centre of each square with a piece of fish on top.

In a separate bowl, combine the butter, lemongrass, ginger and coriander. Once combined, spread evenly over the fish.

Fold the baking foil to create a sealed parcel.

Bake at 200°C for 15-20 minutes until the fish and vegetables are cooked through.

Serve with a squeeze of lime juice and some coriander.
