Ingredients

4 Maris Piper potatoes, washed but not peeled

3tbsp olive oil

1tbsp chopped thyme

Zest of 1 lemon

1 clove garlic, crushed

Method

Preheat the oven to 200C/ 180C Fan/Gas 6. With a knife or mandolin, cut the potatoes into slices 3mm thick. Put in a bowl with the oil, thyme, zest and garlic and mix with your hands to coat the potatoes.

Line a roasting tray with baking paper and arrange the potato slices into 8 stacks.

Bake for 35-40 mins until golden with browned edges.
